


About Emma Manthos
My path into nutrition didn’t begin in a textbook—it began with my own healing.
I grew up believing my worth was something I had to earn. That belief eventually showed up in my relationship with food, movement, and my body, leading me into an eating disorder that quietly shaped much of my early life. Recovery changed everything—not because it was easy, but because it forced me to confront the truth:
health cannot exist where self-worth is conditional.

Future Registered Dietitian
I pursued both my bachelor’s and master’s degrees in nutrition, earning a Bachelor of Science in Dietetics from Florida State University and a Master of Science in Nutrition and Dietetics from Texas Tech University, completing my graduate education by age 22. Throughout my studies, I immersed myself in the science of fueling the body while learning to honor the emotional realities that data alone can’t explain.
Today, I work within Florida State University Athletics, supporting Division I football athletes through hydration strategies, performance nutrition, and education—while also advocating for mental health, balance, and sustainable fueling.

Working within collegiate athletics has shaped how I view health and performance.
Through my role with FSU Football, I support Division I athletes through hydration education, recovery fueling, body composition analysis, and individualized nutrition strategies. My long-term goal is to work as a sports dietitian at the collegiate or professional level, with aspirations of serving within the NFL.
(Yes — I’ve mastered making 30 bowls of oatmeal before sunrise.)

Pageant Leader & Advocate
As a three-time Miss Florida local titleholder, I use pageantry as a professional platform for education and advocacy. It has allowed me to speak statewide about wellness, recovery, and self-worth — and to connect with young people in meaningful, lasting ways.
Pageantry is not about perfection; it’s about presence, preparation, and purpose — values I carry into every aspect of my work.

Beyond my academic and cheerleading endeavors, Anjelica has cultivated a significant online presence as a content creator. She generously shares insights into her multifaceted life, offering a behind-the-scenes look at the balancing act of law school, her role as an NFL cheerleader, and her responsibilities as Miss Jacksonville.

My passion for wellness is deeply personal.
I am a survivor of an eating disorder, and recovery reshaped my relationship with food, movement, and self-worth. Today, I advocate for early intervention, awareness, and recovery-centered education — creating spaces where health is approached with honesty rather than shame.

Dancer & Performer
Dance has always been part of my life—from jazz and musical theater to movement-for-joy today. Through recovery, I’ve learned that movement should support strength, confidence, and mental well-being—not control or punishment. This belief shapes how I approach performance, wellness, and education.
